Instructions

  1. Prepare the apple filling by combining water and cornstarch in a saucepan over medium heat. Add honeycrisp apple chunks, brown sugar, vegan butter, lemon juice, and pumpkin pie spice. Cook until tender and let cool.
  2. For the cookie dough, cream vegan butter and sugars together. Stir in the flax egg and vanilla bean paste. Gradually add flour, pumpkin pie spice, baking powder, and salt until a soft dough forms.
  3. Preheat oven to 350°F (175°C). Scoop tablespoon-sized portions of dough, flatten slightly, add cooled apple filling in the center, seal the dough around it, and roll into balls.
