  • 6 medium russet or gold potatoes
  • 4 tablespoons unsalted butter
  • ¾ cup sour cream
  • ½ cup whole or 2% milk
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 slices Turkey Bacon, crumbled
  • 4 green onions, chopped
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 375°F (190°C). Wash and prick the potatoes, then bake for 45-60 minutes until fork-tender.
  2. Cool the potatoes in ice water, peel, and cut into cubes. Transfer to a large bowl.
  3. Add butter, sour cream, milk, onion powder, garlic powder, salt, pepper, half of each cheese and bacon to the bowl. Mash until smooth.
  4. Transfer the mixture to a greased baking dish. Top with remaining cheeses, bacon, and green onions.
  5. Bake covered for 30 minutes; uncover and bake an additional 10 minutes until golden.
