This hearty recipe features seasoned ground beef, creamy soups, spicy enchilada sauce, and gooey melted cheese, all nestled among crunchy tortilla chips.

  • pounds ground beef
  • 1 medium onion (diced)
  • 1 can (10½ ounces) cream of mushroom soup
  • 1 can (10½ ounces) cream of chicken soup
  • 1 can (10 ounces) mild red enchilada sauce
  • 1 small can (4 ounces) green chilies
  • 4 cups sharp cheddar cheese (shredded)
  • 1 bag (12 ounces) tortilla chips

Instructions

  1. Preheat your oven to 350°F.
  2. In a skillet over medium heat, brown the ground beef and diced onion until the meat is no longer pink; drain excess fat.
  3. Stir in both soups, enchilada sauce, and green chilies; simmer for about 5 minutes.
  4. Break half of the tortilla chips into chunks and layer them in a casserole dish.
  5. Spoon half of the beef mixture over the chips, then add another layer of chips followed by the remaining beef mixture.
  6. Top with shredded cheddar cheese generously.
  7. Bake uncovered for approximately 20 minutes until hot and bubbly.
  8. Broil for an additional 2 minutes for a crispy top.
