Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. Place the chopped dates in a small bowl and sprinkle them with baking soda. In a small saucepan over moderate-high heat, scald the homogenized milk. Pour this warm milk onto the dates, stir well, then set aside to cool for about 15 minutes.
  3. In another small bowl, combine the flour, baking powder, and salt. In a separate bowl, beat the eggs together. Add the beaten eggs, dark brown sugar, butter, and pure vanilla extract into a food processor fitted with a blade attachment. Blend on low speed until combined. Gradually add dry ingredients one tablespoon at a time through the feed tube while continuing on low speed. Remove the lid and add the soaked dates along with their liquid. Blend again until you have a smooth batter.
  4. Pour your batter into the prepared casserole dish and smooth it out evenly. Transfer it to your preheated oven and bake for about 30 minutes or until the center is set and edges are slightly golden.
  5. While your cake bakes, melt butter in a small saucepan over moderate-high heat. Stir in brown sugar and kosher salt while continuously stirring until dissolved. Add cream to this mixture; continue stirring until it starts bubbling then reduce heat to simmer for about 10 minutes until thickened. Keep this sauce on low heat until ready to use.
  6. Once baked, remove your cake from the oven. Poke holes into it using a brochette or fork. Slowly pour about one-third of your Salty Caramel Sauce over the top to let it soak in.
  7. Allow your pudding to settle for approximately 15 minutes so that it absorbs more flavor from the sauce.
  8. Before serving, sprinkle sea salt flakes over the surface of your pudding. Cut into portions or spoon servings onto dessert plates. Drizzle each portion generously with more Salty Caramel Sauce and top with a dollop of whipped cream. Serve warm for an unforgettable dessert experience!
