  • 1.5 pounds beef belly, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and sliced
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup water
  • Green onions and sesame seeds for garnish

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Sear the beef belly pieces until browned on all sides (5–7 minutes). Remove from the pan.
  2. In the same pan, sauté minced garlic and sliced ginger for 1–2 minutes until fragrant.
  3. Return the seared beef to the pan and add light soy sauce, dark soy sauce, apple vinegar, hoisin sauce, brown sugar, and water. Stir well to coat.
  4. Bring to a boil; then reduce heat to low and simmer uncovered for 1 to 1½ hours until the beef is tender and the sauce thickens.
  5. Adjust seasoning if necessary before serving hot, garnished with chopped green onions and sesame seeds.
