- 2 tbsp mayonnaise
- 1 tbsp spicy brown mustard
- 3 drops red food dye (or beet juice)
- 12 medium cocktail olives (with pimentos)
- Salt and pepper to taste
- 3 slices white bread (or 12 rice crackers)
- Preheat oven to 350°F (175°C) if using bread for bases.
- Boil eggs in a pot of water for 20 minutes, then transfer them to cold water for 2-5 minutes. Peel the eggs.
- Slice each egg in half, removing yolks and straining them until powdery.
- Mix yolks with mayo, mustard, salt, pepper, and red dye until smooth.
- If using bread, cut into circles and toast for about 5-7 minutes.
- Create holes in the egg halves for olive slices; fill with yolk mixture and top with olives.
- Seal with toasted bread or rice crackers.
