Instructions

  1. Wash cucumbers thoroughly and cut off ends. Cut each cucumber between two chopsticks to avoid cutting through completely; slice diagonally at a 45° angle and then make perpendicular cuts to create an accordion effect. Alternatively, thinly slice them using a mandolin.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), minced garlic, and chili flakes until well combined.
