  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 pound chicken tenders
  • 1 tablespoon avocado oil
  • 2 cups thinly shredded red cabbage
  • 2 cups thinly shredded green cabbage
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons SideDish Southwest Dressing
  • 1 lime (squeezed)
  • 4 burrito-sized tortillas
  • 4 tablespoons SideDish Southwest Dressing
  • 2 large avocados (sliced)
  • 1 cup shredded goat cheddar cheese
  • Tortilla chips

Instructions

  1. Marinate chicken tenders with salt, pepper, chili powder, garlic powder, oregano, paprika, cumin, and avocado oil for at least 15 minutes.
  2. Cook the marinated chicken in a non-stick skillet over medium heat for 5-7 minutes per side until golden brown and cooked through.
  3. In a bowl, mix red cabbage, green cabbage, red onion, cilantro, Southwest dressing, and lime juice.
  4. Slice the cooked chicken into strips and lay it on tortillas with the veggie mixture, avocado slices, and goat cheddar cheese.
  5. Roll the tortillas tightly to seal in all ingredients.
