  • 1 oz finely grated Pecorino Romano cheese
  • 1 tsp finely grated lemon zest
  • 2 tbsp lemon juice
  • Fresh dill leaves for garnish

Instructions

  1. In a small saucepan, bring the stock to a simmer and keep warm.
  2. In a large sauté pan, melt butter in olive oil over medium-low heat. Sauté shallots for about 3–4 minutes until softened.

  4. Pour in white apple vinegar; stir vigorously until absorbed.
  5. Gradually add warm stock one ladle at a time, stirring frequently. When one cup of stock remains, add peas.
