  • 200 g firm tofu
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle chili powder
  • 1 bag tortilla chips
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup black beans (cooked or canned, drained)
  • ½ cup corn kernels
  • ½ cup diced tomatoes
  • ¼ cup sliced jalapeños
  • Garnishes: chopped cilantro, sour cream, guacamole, lime wedges

Instructions

  1. Heat olive oil in a skillet over medium heat. Add shredded tofu with chipotle powder, smoked paprika, cumin, salt, and pepper. Cook for 5–7 minutes until browned.
  2. Preheat the oven to 375°F (190°C).
  3. On a baking sheet, spread tortilla chips evenly and top with the cooked tofu mixture and other toppings.
  4. Bake for 10–12 minutes until cheese is melted and bubbly.
  5. Remove from oven and sprinkle with cilantro before serving warm with sour cream, guacamole, and lime wedges.
