  • 360 g pasta shells
  • 1 kg butternut squash pumpkin
  • 8 garlic cloves
  • 180 g feta cheese
  • 2 big handfuls baby spinach
  • ¼ cup extra virgin olive oil
  • 1 handful walnuts
  • 8 sprigs of thyme
  • Salt and pepper to taste
  • Chilli flakes (optional)

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Peel and chop the butternut squash into 2 cm cubes and place them in an oven-safe dish.
  3. Add unpeeled garlic cloves, thyme leaves, olive oil, salt, and pepper to the pumpkin; mix well.
  4. Place a block of feta cheese in the center, surrounded by pumpkin.
  5. Roast for about 25 minutes until pumpkin is tender and feta softens.
  6. Cook pasta shells in salted water while ingredients roast; reserve some pasta water before draining.
  7. Once roasted, mash garlic cloves in the dish, break up feta, and stir.
  8. Add baby spinach and cooked pasta shells; mix until creamy, adding reserved pasta water as needed.
  9. Serve topped with chili flakes and crumbled walnuts.
