  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, whisk together heavy cream, granulated sugar, egg yolks, and vanilla extract until smooth.
  3. Stir in pumpkin puree, ground cinnamon, ground ginger, and salt until well combined.
  4. If using mini pumpkins, scoop out their insides before filling them with the custard mixture. Place them upright in a baking dish; if using ramekins, fill them evenly.
  5. Create a water bath by filling the baking dish with hot water halfway up the sides of the containers.
  6. Bake for about 30 minutes or until set but slightly jiggly in the center.
  7. Allow cooling at room temperature before refrigerating for at least two hours or overnight.
  8. To serve, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
