  • 1 cup granulated sugar
  • 2 large eggs (whisked)
  • 1/2 cup all-purpose flour

  • 1 cup pumpkin puree (NOT the entire can)
  • 1 cup evaporated milk (NOT the entire can)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ginger powder
  • 1/8 teaspoon ground cloves
  • 1 tablespoon cornstarch (AKA cornflour)

Instructions

  1. Preheat your oven to 325°F (170°C).
  2. Line an 8×8 inch baking pan with aluminum foil and lightly grease it.
  3. Melt butter and dark chocolate together until smooth; mix in granulated sugar.
  4. Add eggs one at a time, mixing well after each addition.
  5. Sift in flour, cocoa powder, and salt; fold until just combined.
  6. In another bowl, combine pumpkin puree, evaporated milk, egg, vanilla extract, brown sugar, spices, and cornstarch; mix until smooth.
  7. Pour half the brownie batter into the pan, layer with pumpkin filling, then top with remaining brownie batter and swirl gently.
  8. Bake for about 50 minutes or until a toothpick comes out mostly clean.
  9. Allow brownies to cool completely before slicing.
