  • 2 peaches, thinly sliced

Instructions

  1. Prepare the dough by combining sugars, flour, butter, and lemon zest until sandy; chill.
  2. Mix warm water with yeast and sugar; let foam for about 15 minutes.
  3. Combine flours, egg, butter, and activated yeast mixture; knead for about 15 minutes until smooth. Let proof covered for 75 minutes.
  4. Make custard by heating milk with lemon peel; whisk eggs with cornstarch; temper with hot milk. Cook until thickened and chill.
  5. Shape dough into balls; flatten centers to form wells; proof again for 15 minutes.
  6. Brush with egg wash, fill with custard, top with peaches, sprinkle brown sugar, and bake at 320°F for about 20 minutes.
