Instructions

  1. In a saucepan, combine blackberries, water, lemon juice, and sugar. Cook over medium heat for 20-30 minutes until thickened. Smash gently and cool.
  2. Thaw puff pastry sheets for 20-25 minutes; roll out on a floured surface into rectangles.
  3. Spread goat cheese on one sheet; top with cooled blackberry jam. Cut into strips, fold each in half, and twist.
  4. Preheat oven to 400°F (200°C). Brush twists with beaten egg; sprinkle with lemon zest, raw sugar, and thyme.
  5. Place on parchment-lined baking sheet and bake for 16-18 minutes until golden brown.
