  • 1 cup panko breadcrumbs

  • 2 tablespoons extra virgin olive oil

  • ½ teaspoon freshly ground black pepper
  • 2 teaspoons dry parsley
  • 1 teaspoon dry oregano
  • 1 teaspoon dry basil
  • ½ teaspoon garlic powder

Instructions

  1. Preheat your oven to 375 degrees F.
  2. Prepare a baking sheet with foil and place a rack on top, lightly spraying it with pan spray.
  3. Cut the zucchinis into quarter wedges.
  4. In one bowl, mix panko breadcrumbs, Parmesan cheese, salt, pepper, and herbs. In another bowl, whisk together mayonnaise and olive oil.
  5. Brush the zucchini wedges with the mayonnaise mixture and coat them in the breadcrumb mix.
  6. Arrange on the prepared rack and lightly spray tops with pan spray.
  7. Bake for 15 minutes; rotate pan and bake another 15 minutes until golden brown.
