  • 3 oz sweetened orange-flavored Vegan Gelatin
  • 1/2 cup boiling water
  • 1/2 cup iced water
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1/4 cup freshly squeezed orange juice
  • 1 1/2 cups whipped cream (Cool Whip or homemade whipped cream)
  • 3 tablespoons butter
  • 1/3 cup freshly squeezed orange juice
  • 1 1/2 teaspoons orange zest
  • 1/3 cup sugar
  • 1 egg and 1 egg yolk, slightly whisked
  • Whipped cream for garnish
  • Orange wedges for garnish
  • Mint leaves for garnish

Instructions

  1. Prepare a 9 x 9 x 2 inches pan by lining it with aluminum foil or plastic wrap, leaving an overhang.
  2. Combine crushed graham crackers, brown sugar, and melted butter; press into the bottom of the pan and refrigerate.
  3. Dissolve the gelatin in boiling water, then add iced water and cool.
  4. Beat cream cheese and sugar until smooth; add sweetened condensed milk and orange juice.
  5. Mix in the gelatin mixture and fold in whipped cream until combined; pour over crust and refrigerate until set.
  6. Make orange curd by whisking melted butter, sugar, orange zest, juice, and eggs over medium heat until thickened.
