  • 90g all-purpose flour

  1. For the crust, mix brown sugar, granulated sugar, cinnamon, soft butter, and flour in a bowl until combined. Toast over medium heat for 3–4 minutes until golden brown; let cool.
  2. For the apple filling, combine sliced apples with lemon peel, star anise, cinnamon, butter, water, and brown sugar in a saucepan. Simmer until soft. Thicken with cornstarch slurry; remove spices.
  3. Blend cream cheese with cinnamon and most of the cooked apple filling until smooth. Whip heavy cream with sugar until soft peaks form; fold into cream cheese mixture.
  4. Press crushed cookies mixed with melted butter into the bottom of a springform pan to form a crust. Layer half of the cheesecake mixture followed by cooked apples and then the remaining cheesecake mixture.
  5. Chill for at least 8 hours or overnight before serving.
