  • 8 oz cream cheese (room temperature)
  • Strawberry extract
  • Vanilla bean paste
  • Cool Whip or homemade whipped cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking soda, and salt. Add egg, buttermilk, vegetable oil, and vanilla; mix until smooth. Stir in boiling water.
  3. Divide batter into prepared pans and bake for 30–35 minutes until a toothpick comes out clean. Allow cakes to cool completely.
  4. For the strawberry layer: Beat together cream cheese and sugar until creamy; mix in milk and strawberry extract. Fold in half of the Cool Whip.
  5. Assemble by spreading the strawberry mixture on one cooled cake layer and topping with the second layer.
  6. For the vanilla layer: Repeat steps using vanilla bean paste instead of strawberry extract; frost the top of the assembled cake with this mixture.
  7. Garnish as desired before serving.
