  • 2 lbs ground beef (85% lean)
  • 1 medium onion (finely chopped)
  • 2 large eggs
  • 3 garlic cloves (minced)
  • 3/4 cup Panko breadcrumbs
  • 1/3 cup milk
  • 3/4 cup ketchup (for glaze)
  • 2 Tbsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Sauté chopped onion in olive oil until golden. Let cool.
  3. In a large bowl, mix ground beef, cooled onions, eggs, garlic, ketchup, breadcrumbs, milk, salt, and pepper until combined but not overmixed.
  4. Shape the mixture into a loaf on the prepared baking sheet.
  5. Bake for 40 minutes uncovered.
  6. While baking, mix remaining ketchup with brown sugar for the glaze.
  7. After 40 minutes, spread the glaze over meatloaf and bake for an additional 20 minutes until the internal temperature reaches 160°F (71°C).
  8. Allow resting for 10–15 minutes before slicing.
