  • 1 Prise gemahlene Nelken
  • 150 g fester Tofu
  • 100 g Cashewnüsse
  • 120 ml Kokosmilch
  • 85 g Ahornsirup
  • 34 EL Limettensaft
  • 25 g Speisestärke
  • 1 TL Vanilleextrakt
  • 20 g Ahornsirup
  • 60 ml Kokosmilch
  • 20 g brauner Zucker
  • 20 g Nussmus

Instructions

  1. 1. Preheat oven to 180°C (350°F).
  2. 2. Mix dry ingredients for the crust; add flaxseed eggs and vegan butter, then press into a springform pan.
  3. 3. Bake crust for 15 minutes; let cool.
  4. 4. Cook diced apples with water, lemon juice, and sugar until soft.
  5. 5. Blend tofu, cashews, coconut milk, maple syrup, and vanilla until smooth.
  6. 6. Spread apple filling over cooled crust, pour cheesecake mixture on top.
  7. 7. Bake for 30 minutes; cool in the oven before refrigerating for at least 2 hours.
