- 1 lb boneless skinless chicken (breast or thighs), chopped
- 1 tbsp olive oil
- 2 tbsp honey
- Juice of 1 lime
- 1 clove garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 1 ripe avocado, diced
- 1 head romaine or butter lettuce, leaves separated
- 1 cup canned black beans, rinsed
- 1 cup corn (canned, fresh, or thawed if frozen)
- 2 tbsp chopped cilantro
- 1 cup sour cream or Greek yogurt
- 1 tbsp lime juice
- 1 tsp chipotle or smoked paprika
- Heat olive oil in a skillet over medium heat. Add chicken and cook for 8-10 minutes until browned.
- Stir in honey, lime juice, garlic, cumin, smoked paprika, salt, and pepper.
- In a bowl, mix sour cream (or Greek yogurt) with lime juice and spices to make the sauce.
- Assemble by filling lettuce leaves with chicken mixture and topping with avocado, beans, corn, red onion.
- Drizzle sauce over each filled leaf before serving.
