  • 1 ripe avocado, diced
  • 1 head romaine or butter lettuce, leaves separated
  • 1 cup canned black beans, rinsed
  • 1 cup corn (canned, fresh, or thawed if frozen)
  • 2 tbsp chopped cilantro
  • 1 cup sour cream or Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp chipotle or smoked paprika

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chicken and cook for 8-10 minutes until browned.
  2. Stir in honey, lime juice, garlic, cumin, smoked paprika, salt, and pepper.
  3. In a bowl, mix sour cream (or Greek yogurt) with lime juice and spices to make the sauce.
  4. Assemble by filling lettuce leaves with chicken mixture and topping with avocado, beans, corn, red onion.
