  • ¼ tsp salt
  • ½ cup brown sugar
  • ½ cup sour cream (or plain yogurt)
  • ½ cup whole milk
  • 1 large egg

  • Fresh squeezed lemon juice (to taste)

Instructions

  1. Preheat your oven to 425°F and prepare a muffin tray with cooking spray.
  2. In a glass bowl, combine molasses and butter; microwave until the butter melts. Stir and let cool.
  3. In another bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, nutmeg, and salt.
  4. Combine brown sugar, sour cream (or yogurt), milk, and egg with the cooled molasses mixture.
  5. Gradually mix the wet ingredients into the dry ingredients until just combined; avoid overmixing.
  6. Fill muffin cups to the top and sprinkle with coarse sugar if desired.
  7. Bake for 5 minutes at 425°F; then reduce to 350°F for an additional 11–14 minutes until done.
  8. Cool in the pan briefly before transferring to a wire rack.
  9. For glaze, mix powdered sugar with lemon juice until creamy; drizzle over cooled muffins.
