  • 1 lb mild breakfast sausage
  • 12 large eggs
  • 6 English muffins
  • 6 slices of cheese
  • ¼ cup milk (optional)
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp red pepper flakes
  • 1 tsp Italian seasoning

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, whisk together eggs and milk along with seasonings. Pour into a greased baking dish and bake for about 20 minutes until set.
  2. In a separate bowl, mix ground sausage and beef with spices; shape into patties. Cook in a skillet over medium heat for 5–6 minutes per side until browned.
  3. Toast English muffins in melted butter until golden brown.
  4. Assemble each sandwich by placing cheese on the muffin bottom, adding a sausage patty and baked egg, then topping with the muffin half.
  5. Wrap each sandwich tightly in parchment paper or plastic wrap; store in ziplock bags in the freezer.
