  • 30 g cassava flour
  • 30 g cocoa powder
  • 1 tbsp arrowroot starch
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 122 mL aquafaba
  • 200 g organic granulated sugar, divided
  • 100 g unsweetened applesauce
  • 60 g unsweetened dairy-free yogurt
  • 2 tbsp cocoa powder for dusting
  • 226 g vegan butter
  • 70 g freeze-dried strawberries, pulsed into a flour
  • Coconut fat from 1 can full-fat coconut cream
  • 450 g powdered sugar, sifted
  • 240 mL coconut cream
  • 200 g vegan chocolate chips
  • 1 cup sliced strawberries

Instructions

  1. Preheat the oven to 175°C and line a medium jelly roll sheet with parchment paper.
  2. In a medium bowl, whisk together oat flour, cassava flour, cocoa powder, arrowroot starch, baking powder, and baking soda.
  3. In a large bowl, beat aquafaba and sugar until foamy. Add applesauce and yogurt; mix well.
  4. Gently fold dry ingredients into wet ingredients until just combined.
  5. Spread batter evenly on the prepared baking sheet and bake for 10-13 minutes until set.
  6. Cool the cake rolled in a towel dusted with cocoa powder for about 2 hours.
  7. Prepare strawberry buttercream by mixing vegan butter with coconut cream fat and powdered sugar until fluffy.
  8. Unroll the cooled cake, spread buttercream evenly, then re-roll.
  9. For ganache, heat coconut cream and stir in chocolate chips until melted; chill briefly before pouring over the roll.
  10. Garnish with sliced strawberries before serving.
