  • 600g full-fat cream cheese (room temperature)
  • 115g plain or Greek yogurt (room temperature)
  • 150g caster sugar
  • 15g cornstarch
  • Zest of 1 lemon
  • 3 large eggs (room temperature)
  • ½ tablespoon lemon juice
  • ½ teaspoon vanilla bean paste
  • 500g fresh blueberries (divided for filling and sauce)
  • 50g sugar (for sauce)
  • 1 tablespoon lemon juice (for sauce)

Instructions

  1. Preheat oven to 355°F (180°C) and prepare an 8-inch springform pan with parchment paper.
  2. Combine crushed biscuits and melted butter; press into the bottom and sides of the springform pan. Bake for about 10 minutes until set.
  3. Lower oven temperature to 285°F (140°C). In a large bowl, beat cream cheese and yogurt until smooth.
  4. Gradually mix in sugar, cornstarch, and lemon zest until combined.
  5. Add eggs one at a time, mixing gently after each addition.
  6. Stir in lemon juice and vanilla bean paste; fold in half of the blueberries carefully.
  7. Pour mixture into the crust; bake for about 50–60 minutes until edges are set but center jiggles slightly.
  8. Cool gradually in the oven with the door ajar, then refrigerate for at least four hours or overnight.
  9. For blueberry sauce, cook remaining blueberries with sugar and lemon juice until soft; reduce to syrupy consistency if desired.
  10. Serve slices drizzled with blueberry sauce.
