  • 2 cups mini marshmallows

  • 2 large eggs
  • 1 1/2 cups milk
  • 2 1/4 cups all-purpose flour

  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 quart vegetable oil for frying

Instructions

  1. Line an 8×8-inch pan with parchment paper and layer bottom with graham crackers.
  2. Melt 1 cup of chocolate chips in the microwave and drizzle over the crackers. Layer with remaining chocolate chips, marshmallows, and top with more melted chocolate before adding another layer of graham crackers. Refrigerate for 10 minutes.
  3. Whisk together eggs, oil, and milk in one bowl; combine flour, sugar, baking powder, and salt in another bowl. Mix both until smooth.
  4. Heat vegetable oil to 425°F in a deep fryer or saucepan.
  5. Cut s'mores into 36 pieces after chilling; dip each into batter before frying until golden brown (about 1 minute).
  6. Transfer to paper towels to drain excess oil and serve warm.
