  • 2 lamb shanks

  • 1/4 teaspoon cinnamon

  • 2 cups beef or chicken broth
  • Juice of 1 lime

Instructions

  1. In a Dutch oven, heat olive oil over medium-high heat. Season lamb shanks with salt and pepper, then sear until golden brown on all sides. Remove from pot.
  2. Add onion, garlic, and ginger to the pot; sauté for about 5 minutes until softened. Stir in coriander, cumin, and cinnamon for an additional minute.
  3. Return lamb shanks to the pot along with sweet potato chunks. Pour in coconut cream and broth; stir gently to combine.
  4. Bring to a simmer, cover, and reduce heat to low. Cook for about 2 hours or until lamb is tender.
  5. Squeeze lime juice over the dish before serving; garnish with fresh coriander if desired.
