- 1 1/2 cups cake flour
- 2 tsp. corn starch
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 1 cup cold unsalted butter, cubed
- 1 1/4 cups granulated sugar
- 2 large eggs
- 2 large egg yolks
- 1 tsp. vanilla extract
- 1 cup packed brown sugar
- 6 Tbsp. softened butter
- 2 Tbsp. cinnamon
- 8 oz. cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 1/2 cups confectioners' sugar
- 1 tsp. vanilla extract
- 1/2 tsp. salt
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix brown sugar, softened butter, and cinnamon for the filling.
- In a large bowl, whisk together all-purpose flour, cake flour, baking soda, baking powder, corn starch, and salt.
- Cream cold butter and granulated sugar in a stand mixer until smooth. Add eggs and vanilla extract; mix until combined.
- Gradually add dry ingredients to the wet mixture until just combined.
- On a floured surface, shape dough into a rectangle and spread the cinnamon filling evenly over it. Roll the dough into a log and slice into equal pieces.
- Place cookies on a parchment-lined baking sheet and bake for 9-11 minutes until edges are golden brown.
- Cool cookies before frosting them with the cream cheese mixture.
