  • 1½ cups fresh raspberries
  • 9 oz white chocolate
  • 4 tbsp honey

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pan and line it with parchment paper.
  2. Mix flour, cocoa powder, salt, and baking powder in one bowl; set aside.
  3. Melt butter and semi-sweet chocolate together. Stir in sugar; add eggs and vanilla extract.
  4. Combine wet and dry ingredients; pour into the baking pan and bake for about 24 minutes.
  5. For the chocolate mousse, whip half the cream and fold in melted chocolate mixed with dissolved vegan gelatin.
  6. Spread chocolate mousse over cooled brownie base; chill.
  7. For raspberry mousse, blend raspberries and fold into whipped cream mixed with melted white chocolate and gelatin.
  8. Layer raspberry mousse over chocolate layer; chill again.
  9. For vanilla mousse, repeat similar steps using remaining ingredients, then layer over raspberry mousse.
  10. Chill overnight before serving; top with whipped cream, fresh raspberries, and chocolate curls.
