  • 1/4 cup unsalted butter (melted)
  • 32 oz cream cheese (softened)
  • 1 1/3 cups sugar
  • 4 large eggs
  • 1 cup smooth peanut butter
  • 2 tsp vanilla extract
  • 1/3 cup heavy cream
  • 1 1/4 cups miniature chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • 1 1/2 cups milk chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a springform pan by greasing it and lining the bottom with parchment paper.
  2. In a food processor, blend Oreo cookies into fine crumbs. Combine with melted butter and press firmly into the bottom of the prepared pan. Chill while preparing the filling.
  3. In a mixing bowl, beat softened cream cheese and sugar until smooth. Gradually mix in peanut butter, heavy cream, vanilla extract, and eggs one at a time. Stir in chocolate chips.
  4. Pour filling over chilled crust and smooth the top. Bake in a water bath for about 55-70 minutes until edges are set but center remains slightly loose.
  5. Let cool on a rack before refrigerating for at least 5 hours or overnight.
  6. For ganache: Heat heavy cream until boiling, then pour over milk chocolate chips in a heatproof bowl. Stir until melted and smooth.
  7. Once cooled, pour ganache over the cheesecake and garnish as desired.
