  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon cayenne pepper
  • 1 ½ tablespoons freshly squeezed lime juice
  • Soft or hard taco shells
  • Fresh cilantro leaves
  • Chopped brown or red onion
  • Lime wedges
  • Sour cream

Instructions

  1. Marinate the chicken by combining it with chili, cumin, paprika, cayenne pepper, lime juice, and 1 tablespoon of olive oil in a mixing bowl. Let it marinate for at least 1 hour (or longer for more flavor).
  2. Heat a skillet over medium-high heat and add the remaining olive oil. Cook the marinated chicken for about 6 minutes on one side before flipping and cooking for another 6-8 minutes until fully cooked (165°F internal temperature).
  3. Remove the chicken from the skillet and let it rest for a few minutes before dicing into small cubes.
  4. Assemble your tacos by filling taco shells with diced chicken and topping with cilantro, chopped onion, a squeeze of lime juice, and sour cream.
