  • ½ cup sour cream
  • 0.85 ounce chicken taco seasoning
  • 3 cups shredded white meat chicken
  • 15 ounces seasoned black beans (drained)
  • 3 cups crushed tortilla chips
  • 2½ cups shredded Colby jack cheese
  • 1 cup shredded Monterey jack cheese
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. In a large bowl, mix together cream of chicken soup, salsa, green chilies, sour cream, and taco seasoning until blended.
  3. Stir in shredded chicken and black beans until well combined.
  4. Layer half of the mixture in the baking dish, followed by half the crushed tortilla chips.
  5. Add the remaining chicken mixture on top of the chips.
  6. Sprinkle with remaining crushed chips and top with Colby jack and Monterey jack cheeses.
  7. Bake for about 30 minutes until bubbly and golden brown.
  8. Garnish with cilantro before serving.
