Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Cut puff pastry into 5-inch squares and refrigerate.
  3. In a saucepan, melt butter, then stir in flour and salt for about one minute.
  4. Gradually whisk in room temperature milk until smooth; bring to a boil.
  5. Lower heat to simmer until thickened; add spinach until wilted.
  6. Stir in diced chicken ham and 1 cup grated Swiss cheese; set aside.

  8. Fold corners towards the center of each square and brush with egg white.
