  • 1/2 cup finely diced onion
  • 2 cups cheddar cheese, divided
  • 1 cup sour cream or 8 ounces softened cream cheese
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 teaspoon garlic powder
  • 2 teaspoons kosher salt
  • 1/21 teaspoon black pepper

Instructions

  1. In a large mixing bowl, combine frozen diced potatoes, diced onion, 1 cup of cheddar cheese, sour cream or cream cheese, cream of chicken soup, garlic powder, salt, and pepper. Mix until well combined.
  2. Spray the insert of your slow cooker with non-stick spray and pour the potato mixture into it evenly.
  3. Cover the slow cooker and cook on high for 3 hours or low for 6 hours until the potatoes are tender.
  4. Once cooked, sprinkle the remaining cup of shredded cheddar cheese over the top. Cover and cook on high for an additional 30 minutes until the cheese is melted and bubbly.
