  • 1 cup shredded Colby cheese
  • 1 cup shredded cheddar cheese
  • 4 ounces Velveeta cheese
  • 1/2 teaspoon crushed red pepper flakes
  • 2 1/4 cups Panko breadcrumbs, divided
  • 1 large egg, lightly beaten
  • 1/2 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • Vegetable or canola oil, for frying
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Steam the broccoli until slightly softened. Allow it to cool before chopping into small pieces.
  2. In a large bowl, combine chopped broccoli, Colby cheese, cheddar cheese, Velveeta, crushed red pepper flakes, 1/4 cup Panko breadcrumbs, and one beaten egg; mix well.
  3. Form the mixture into balls about the size of a tablespoon and refrigerate for at least 30 minutes.
  4. Set up three bowls: one with flour, one with two beaten eggs mixed with water, and one with remaining Panko breadcrumbs.
  5. Heat oil in a heavy pot to 375°F.
  6. Coat each ball in flour, dip in the egg mixture, and then roll in Panko breadcrumbs before frying until golden brown.
  7. Drain on paper towels and serve warm.
