  • 2 ½ teaspoons vanilla extract
  • 4 large eggs

Instructions

  1. Preheat oven to 160ºC / 325ºF and line a springform pan.
  2. Prepare the crust by blending crackers and sugar; mix in melted butter and press into the pan. Bake for 10 minutes.
  3. For the blueberry layer, combine blueberries, sugar, flour, and lemon juice in a bowl.
  4. Mix cream cheese and sugar until smooth; add eggs gradually. Incorporate sour cream, cornstarch, and vanilla.
  5. Assemble by pouring cheesecake batter into the crust; top with blueberry mixture.
