  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into thin medallions.
  3. Arrange the medallions in a baking dish.
  4. In a saucepan over medium heat, combine butter, brown sugar, water, cinnamon, cloves, nutmeg, and salt until melted.
  5. Brush three-quarters of the sauce over the sweet potatoes and cover with foil; bake for 45-50 minutes.
  6. Uncover, pour remaining sauce over the top, and sprinkle with pecans and mini vegan marshmallows.
