  • 1/2 cup (104g) sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups (175g) uncooked quick cook oats
  • 8 oz cream cheese
  • 1/2 cup (104g) sugar
  • 1 large egg, divided
  • 3/4 cup (127g) white chocolate chips
  • 1 1/4 cups chopped strawberries
  • 1 1/4 cups (163g) blueberries

Instructions

  1. Preheat oven to 350°F (180°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, mix flour, baking soda, cinnamon, and salt; set aside.
  3. Cream butter with sugars until light and fluffy; add eggs and vanilla.
  4. Gradually incorporate dry ingredients; stir in oats.
  5. Press half the dough into the pan; prepare cheesecake by mixing cream cheese, sugar, egg yolk, and melted white chocolate.
  6. Spread cheesecake mixture over the dough; top with berries and crumbled remaining dough.
  7. Bake for 25–30 minutes until golden brown; cool before slicing.
