  • 3/4 cup light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 6 oz cream cheese, cold
  • 2 tbsp apple cider reduction (from above)
  • 3/4 cup granulated white sugar (for topping)
  • 1/4 tsp ground cinnamon (for topping)
  • 1/8 tsp ground nutmeg (for topping)
  • pinch ground allspice (for topping)
  • 12 tbsp salted butter, melted (for topping)

Instructions

  1. Simmer apple cider in a saucepan over medium heat until reduced by half to concentrate the flavor.
  2. In a mixing bowl, beat cold cream cheese with sugar and vanilla until smooth; refrigerate.
  3. In another bowl, cream together softened butter, light brown sugar, and remaining granulated sugar until fluffy. Add egg yolks and vanilla; mix well.
  4. Gradually stir in flour, spices, baking powder, baking soda, and salt until just combined.
  5. Preheat the oven to 350°F (175°C). Scoop dough onto parchment-lined baking sheets; create an indentation and fill it with cheesecake mixture. Cover with more cookie dough to seal.
  6. Bake for approximately 11 minutes or until golden brown around the edges.
