Instructions

  1. Preheat your oven to 375°F (190°C) and spray a 9-inch pie plate with nonstick baking spray.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt. Gradually incorporate the dry ingredients into the wet mixture until a soft dough forms.
  5. Fold in chocolate chips, mini M&M's, and sprinkles before spreading the dough evenly in the prepared pie plate.
  6. Bake for 17–18 minutes until golden brown around the edges. Let cool on a wire rack.
  7. For frosting, beat softened butter with salt and vanilla until creamy; gradually add powdered sugar and heavy cream until fluffy.
  8. Pipe swirls of frosting onto the cooled cookie cake and top with additional sprinkles.
